Spinach steams FAST, and that my friend’s could not be more true, so don’t leave the pot unattended!
This is an easy side-dish for two, and is excellent. You can make this with chicken, fish, or even by itself.
You will need
2 C of Fresh Spinach leaves
2t Salt
Honey Dijon Mustard – My favorite is the lighthouse fat free honey dijon, yum!
Start your pot a boilin’ and place your steamer tray in there, once it starts to boil, remove the pot completely from the burner, place the spinach in the pot, leave the pot uncovered, toss the spinach gently until it is lightly steamed. Spinach wilts up VERY fast when steamed.. the idea here is to soften it enough to make it warm and bring the flavor out, you still want about 1 C of steamed spinach to split with your #2. Remove it from the pot as soon as it gets to the right consistency.
sprinkle with salt, drizzle with dressing, place your main dish right on top, and enjoy!!Picture via Google
