Hey there! I am full of recipes today, so here I am posting my second one of the day!
If you are an omelet person, you might just love this, it is my favorite.
2 eggs
1 T low sodium bacon bits (make your own or buy them)
2-3 T shredded pepperjack cheese
1/8 C chopped green onions
1 T salsa
Whisk eggs until a little bit foamy, heat up small skillet on med-low, spray with Olive Oil (extra virgin). Pour eggs into bottom of skillet and when cooked halfway through pile everything on one half (except for salsa). place a lid on the skillet and cook until cooked through, fold omelet in half with spatula until cheese melts both sides together. Slide omelet onto plate, top with salsa.
Serve with whole wheat toast w/ honey on top
