I can’t believe it’s true, but it is. I have officially made a fantastic healthy cookie recipe!!
I know, the picture doesn’t look the very best, but they are too warm to take out of the pan 🙂
1 stick of butter at room temp.
6 T Dark Brown Sugar
2 eggs
2t cinnamon
Mix together until creamy and slightly fluffy
2 bananas
Mix until incorporated well, not too lumpy
3 C of rolled oats (you can use quick oats if you want)
Stir in 1C oats at a time until mixed well
1 C of semi-sweet chocolate chips
1/2 C shredded coconut
stir well
Pour into a greased 9×13 pan
melt 1/2 C of Peanut Butter in the microwave, heat at 30 seconds. Stir, 30 more seconds. Drizzle onto the top.
Bake at 350 for about 15 minutes or until Peanut Butter is bubbly and edges are crisp.
