I have tried this recipe twice and I love it. It is very versatile which is nice. As long as you have Chicken, cheese, flour, butter, and salt and pepper you are good to go! This is perfect for us because I am usually trying to think of things that can go together I hate making a trip to the store for just a few ingredients, I like to mix this dish up!
To serve 4, use:
3 or 4 medium size chicken breasts, you can leave them whole or you can cut them into bite size pieces.
1 1/2 C. flour
1 C. shredded cheese of your choice
1 T seasoning salt
or salt and pepper to taste
1 cube of butter
Preheat the oven to 375 for whole chicken breasts, or 400 for cubes. Mix the dry ingredients together with the cheese in a large bowl. Either cube the chicken or leave it whole and completely cover chicken with the dry ingredients. Lay the chicken in a greased baking dish and pour the butter over the top, make sure to get it all over. (If you cube the chicken, you can stir the butter in for better coverage.) Just bake for about 30 minutes for whole chicken and 20 minutes for cubed.
Now for the fun part, you can do any kind of cheese and seasonings you like, here are a few suggestions:
Cube the chicken, use Cheddar cheese, bacon bits, and ground pepper, serve with a baked potato.
Leave the chicken whole, use Parmesan cheese, garlic and Italian seasonings, serve with mashed or accordion potatoes.
Cube chicken, use Parmesan cheese, salt and pepper, serve with a baked potato and Caesar salad.
